Pork Loin with Mustard
INGREDIENTS
1 Kilo pork tenderloin
150 grams of finely chopped bacon
1 onion, sliced
Pepper and seasoning
2 or 3 tablespoons mustard
1 cup cream
1 cup white wine
1 cup vinegar
Chopped parsley
PROCEDURE
Spreads the combination of pepper and seasoning on the pork loin. Let it stand for a richer flavor. Then fry in a skillet the bacon and then remove from pan. Put the meat in the bacon fat for frying. We add the sliced onion. Not block the pan. Then add the wine or vinegar and parsley. Cover the pan and let simmer over low heat. If half of the cooking takes a bit of liquid you add a little water. Before the end of cooking is combined with mustard cream and bacon. It empties into the meat and cook for a few minutes. Then remove the meat from the skillet and prepare a gravy boat with all that is left in the pan. This is to serve the meat into thin slices bathed each slice with this rich sauce.
